Tahini Date Espresso Bites

Ingredients

  • 2 scoops Coffee Ka’Chava
  • 2 cups pitted medjool dates
  • 2 cups raw walnuts
  • 1-2 tbsp tahini*
  • 1/2 tsp vanilla paste or ground vanilla
  • 1/4 tsp kosher salt

How to make

  1. To a food processor, add the pitted medjool dates and walnuts. Pulse together in intervals until the walnuts are fine and the mixture is crumbly. Add in the tahini, vanilla, and kosher salt, and pulse together a few more times until the mixture sticks together when pressed.
  2. Dump the mixture into a parchment lined 1lb loaf pan (8.5 x 4.5), press down firmly, and let it set in the freezer for 30 minutes to 1 hour. Then cut into squares (recipe yields 18 bites) and store in the fridge in a glass container.

Notes

  1. *Depending on how moist your dates are, you may need to just use 1 tbsp of tahini.
