Cookie Ingredients
- 2 scoops Vanilla Ka’Chava
- 1 cup softened butter
- 1 1/3 cup sugar or coconut sugar
- 1/3 cup brown sugar
- 2 large eggs
- 2 tespoons vanilla extract
- 3 cups flour (almond and oat flour work as well)
- 1 tsp baking soda
- 3/4 tsp salt
For Rolling
- 1/3 cup coconut sugar (or regular sugar)
- 1 1/2 tbs cinnamon
How to make
- Preheat oven to 350°F (175°C). Line baking sheet with parchment.
- In a bowl, beat butter until smooth. Add sugar and brown sugar. Beat for another 2 minutes.
- Add eggs, vanilla, and beat again. It should be light and fluffy.
- In a separate bowl, mix together flour, Ka'Chava, baking soda, and salt.
- Slowly add the dry mixture into the wet mixture. Mix until flour streaks are gone. Try not to over over mix.
- In a small dish, mix sugar + cinnamon.
- Roll dough into 1½ Tbsp balls, then roll each in cinnamon sugar mixture. Place on baking sheet.
- Bake 8–10 minutes until edges are golden and tops crack slightly.
- Let cool before serving and enjoy!
