Cookie Ingredients

  • 2 scoops Vanilla Ka’Chava
  • 1 cup softened butter
  • 1 1/3 cup sugar or coconut sugar
  • 1/3 cup brown sugar
  • 2 large eggs
  • 2 tespoons vanilla extract
  • 3 cups flour (almond and oat flour work as well)
  • 1 tsp baking soda
  • 3/4 tsp salt

For Rolling

  • 1/3 cup coconut sugar (or regular sugar)
  • 1 1/2 tbs cinnamon

How to make

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
  2. In a bowl, beat butter until smooth. Add sugar and brown sugar. Beat for another 2 minutes.
  3. Add eggs, vanilla, and beat again. It should be light and fluffy.
  4. In a separate bowl, mix together flour, Ka'Chava, baking soda, and salt.
  5. Slowly add the dry mixture into the wet mixture. Mix until flour streaks are gone. Try not to over over mix.
  6. In a small dish, mix sugar + cinnamon.
  7. Roll dough into 1½ Tbsp balls, then roll each in cinnamon sugar mixture. Place on baking sheet.
  8. Bake 8–10 minutes until edges are golden and tops crack slightly.
  9. Let cool before serving and enjoy!
