No-Bake Carrot Cake Bars

Bar Ingredients
- 2 scoops Vanilla Ka'Chava
- 1 cup old fashioned rolled oats
- 1 cup raw pecans
- 1 1/4 cup medjool dates, pitted
- 1 cup shredded carrots
- 1 tsp vanilla extract & pinch of sea salt
- 2 tsp lemon juice
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp ground ginger
Frosting Ingredients
- 3/4 cup raw cashews
- 1/3 cup coconut cream
- 1 1/2-2 tbsp lemon juice
- 1 tbsp melted coconut oil
- 3-4 tbsp maple syrup
- 1 tsp vanilla extract & pinch of sea salt
How to make
- In a food processor, combine the pecans & oats, process for 1 minute until broken down
- Add the remaining ingredients, besides the carrots, & blend until a dough forms, then fold in the shredded carrots
- Press the dough into a parchment-lined pan
- In a blender, combine the frosting ingredients & blend until smooth
- Pour the frosting over the carrot cake bars, spreading evenly
- Freeze overnight or for at least 4 hours
- Remove from the pan, cut into bars, & enjoy!
