No-Bake Carrot Cake Bars

Bar Ingredients

  • 2 scoops Vanilla Ka'Chava
  • 1 cup old fashioned rolled oats
  • 1 cup raw pecans
  • 1 1/4 cup medjool dates, pitted
  • 1 cup shredded carrots
  • 1 tsp vanilla extract & pinch of sea salt
  • 2 tsp lemon juice
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp ground ginger

Frosting Ingredients

  • 3/4 cup raw cashews
  • 1/3 cup coconut cream
  • 1 1/2-2 tbsp lemon juice
  • 1 tbsp melted coconut oil
  • 3-4 tbsp maple syrup
  • 1 tsp vanilla extract & pinch of sea salt

How to make

  1. In a food processor, combine the pecans & oats, process for 1 minute until broken down
  2. Add the remaining ingredients, besides the carrots, & blend until a dough forms, then fold in the shredded carrots
  3. Press the dough into a parchment-lined pan
  4. In a blender, combine the frosting ingredients & blend until smooth
  5. Pour the frosting over the carrot cake bars, spreading evenly
  6. Freeze overnight or for at least 4 hours
  7. Remove from the pan, cut into bars, & enjoy!
