Matcha Coconut Brownie Bars

Brownie Base Ingredients

  • 8 whole Medjool Dates
  • 1/2 cup almond flour
  • 1/3 cup cocoa powder
  • 2 Tbsp Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract

Coconut Matcha Layer Ingredients

  • 2 scoops Matcha @kachava
  • 1 3/4 cup coconut flakes
  • 1/4 cup pure maple syrup
  • 1/4 cup melted coconut oil

Chocolate Coating Ingredients

  • 1 cup dark chocolate
  • 1 tbsp coconut oil

How to make

  1. If your dates aren't soft soak them in hot water for 20 min
  2. Process all the brownie ingredients together until dough-like
  3. Press into a 9x5 loaf tin lined with parchment paper
  4. Set in the fridge while you prepare the next layer
  5. Process all the coconut layer ingredients together until the texture easily presses between your fingers
  6. Pour overtop brownie base and freeze at least 1 hour
  7. Melt your chocolate with coconut oil in 30 second intervals until smooth, stirring in between each time
  8. Slice into bars, dip in chocolate with a fork, and place on parchment paper
