Ingredients

  • 2 scoops Chai Ka'Chava
  • 1 cup coconut milk
  • 1/2 cup brown sugar or 1 cup maple syrup
  • 1/4 cup vegetable oil
  • 1 tbsp egg replacer
  • 1 tsp coconut extract
  • 1 tsp vanilla extract
  • 6 slices of vegan bread
  • Sliced fresh fruit and cinnamon for garnish
  • Instructions

  • Place the Ka'Chava, coconut milk, brown sugar, oil, egg substitute, coconut extract, and vanilla extract into a blender.
  • Blend on high for 2 minutes, pausing now and then to scrape the sides of the blender jar. After blending, pour the mixture into a medium-sized bowl.
  • Next, lightly spray a medium skillet with cooking spray and warm it over medium heat.
  • Quickly immerse one slice of bread into the coconut milk mixture, ensuring it is well-coated, and place it in the hot skillet. Allow it to cook until the bottom becomes crisp, taking around 1 to 1 1/2 minutes. Flip the bread and let it cook on the other side for an additional 1 to 1 1/4 minutes.
  • Continue this process with the remaining slices of bread and the Ka'Chava coconut milk mixture.
  • When ready to serve, cut each toast slice diagonally and, if you like, adorn it with fruit and a sprinkle of cinnamon.
